How do add cost of items to POS account? Or, is this not possible with this account level? If not what is the best level fort his as I need to be able to run detailed reports.

From what you've described, it sounds like you'd benefit from being able to generate a Cost of Goods Sold (COGS) report. Currently, this level of reporting is only available via the Square for Retail Plus plan, which is a paid subscription.
Take a look at the reporting options available with Square for Retail and if you'd like to try these features you can always sign up for the free 30-day trial. If you don't want to continue with the subscription following the trial, ensure you cancel the plan or downgrade before the trial ends.

Square for Retail Plus includes Unlimited sets of permissions, Sales vs. Labour Reporting as well as timecards. Compare the features across the plans here.
