I recently purchased a Square Reader and am doing some transaction testing. I enter a sales amount for $350 AUD. I was not prompted for a PIN. I was making the payment from a Google Pay wallet. I understand that purchases over $200 AUD will require PIN in Australia.

PIN entry should $200, though ultimately this should be prompted by the payment card or in this case, Google Pay - rather than Square. Did you actually get to the point of completing the transaction without a PIN? It's also possible if you didn't complete the transaction it would have asked for a PIN later in the checkout flow.
