When you print a receipt, the printer spits out a ticket first, awesome, I want that. My newbie question is how do I add fields to that? I want to add a customer phone number option that auto populates the customers phone number on that ticket, not their receipt. Hope all that makes sense.

Sad to say that auto populating a phone number onto ticket is not a thing with Square's Open Ticket feature. You'll need to manually type in their phone number when creating the ticket.
