Curbsside pickup pre orders

I am trying to set up online ordering for restaurants, and I have 2 questions.

1) Is there any way you can create a preorder on the iPad if someone calls an order in?

2) Some customers prefer to pay cash.  Is this still possible with square?

I am currently using the free square POS for restaurants if that helps....hoping that doesn't come into play.
