I’ve been with Square since 2018 and for 8 years that I am aware there have been promises to provide a fix/patch/feature and even a “we’re working on it…soon.” Which was particularly galling because I recall that “soon” after that little gem the thread got archived as deep as the Arc of the Covenant. So square your online costs have just jumped and your solution for this little crafter is to give you more money either by upgrading my plan or taking a tiny bullet with each online purchase (when I can get them,) Sigh.
What can I do? You are the big dog on the porch. Please give us a feature to so that customers can order something that is not food but may take 3 weeks to make and ship to them. My customers trust you. I need you and you know it. Don’t forget us little guys.

I forgot to mention that the bulk method that I gave you above is actually documented in Square's Help document "Track Your Inventory." It's in the section titled "disable inventory tracking in bulk."
Does not help. Can't see how it applies to what I asked.
1) Everything I have is OOAK, so "in stock" is always 1 until sold. "Track by availability" doesn't seem to apply since they aren't made to order, but "track by stock" only shows "in stock" items.
2) when sold, the count goes to 0, and the listing disappears.
3) Would like to be able to show sold items, as "not available", but both as examples of what I've done, and as possible custom re-makes.
@kayteeS As I said, I was not answering all of the other questions brought up. ONLY the one posed by the original poster. My purpose here was to address that topic only -- not all of the other topics that came up and should have been in their own thread, anyway.
That being said, there IS a setting to display even out of stock items in our stores, so that would address #2 in your list, and most likely #3. That setting is found on your web dashboard > Online > Websites > Shared Settings > Item Preferences.
There you can set "Display out of stock items on site" and even (if you want) "Out of stock indicator."
