I travel all the time. I run my business off my phone. When I’m in a different time zone my square calendar shifts to that time zone, confusing my clients with appointment reminders that are hours off, depending on where I am. I need to lock my calendar in EST, no matter what time zone I’m in. I don’t want to disable my phone’s location services because I also use my phone as an alarm clock and need to have the correct local time. Help Please!

I can understand your situation. However, at this time, the Square Appointments Booking Calendar is synced with your location, so if you're traveling and working on your appointments abroad or out of town, the time zone will get adjusted to the current time zone.
A solution for this situation would be to change your Calendar and Booking Settings to allow your customers to choose their desired time zones instead of the system assigning one automatically. This will allow your customers to assign a time zone and receive reminders and alerts based.
After making the change to "Allow customer to choose timezone when booking". All reminders and alerts will be locked to the time zone your customer chooses.
