I have a small studio, and am hiring a booth renter. She will have access to square appointments and do her own separate checkout. How do I set up the booking so on my website there’s one button to book and then it takes you to a screen to choose between the two of us and then the service and date? Or just any way to allow one to select between the two of us? Right now it takes you to the service list, but it doesn’t separate between our services which vary in type, length of time, and price. I’d like to keep a single button on my website to book an appointment.
I cannot think of a way to do it without two buttons.
Currently we have one button that goes to a page with all services and all service providers. But all the service providers provide the same services.
Then we have a separate page for each service providers, that links to a custom widget, which shows all of that service providers' services.

There are a couple of different options you can do.
Before I get into all the things, let's start at square one.
In your Appointments tab, under Online Booking, choose Settings. Scroll down until you'll see this menu; you'll see the Remove team members from the online booking site. Make sure that is NOT checked for you.
Did that solve it? Is that how you'd like it appear? (Hopefully I understood the assignment)

No, I want all of the service providers listed on the online booking. But only one of us wants to require card on file for a few specific services, which it appeared square gave me the option to do as it had me select specific services. But when I go through the online booking process, it requires card for every service and every provider. So my question is really, can I just require card information for specific services/providers?
Not that I know of. Square Appointments has a lot of room to grow when it comes to businesses with several service providers. The granularity of settings and reporting availability is limited.
