Hey @Jeh1968, thanks for flagging this here.
Sorry to hear this is happening - software updates can take a few minutes and usually happen overnight because of this as long as you don't turn it off. I'll leave more information on that below.
How long has the update been running? There's no way for us to stop a software update or speed it up once it has started.
Square Terminal automatically updates, so you will always get the latest features and improvements.
Most software updates should happen automatically every 2-4 weeks and will happen overnight as long as your Terminal is plugged in and on. Keep in mind, Square Terminal can be in sleep mode to update, as long as you don’t turn it off.
Software updates are, by default, set at 3am to avoid any disruption to your normal business hours. If you need to adjust your nightly reboot time, head to Settings > General from the three horizontal lines in the upper left corner. Tap Nightly Reboot and select the time that works best for you.

Thank you for the feedback @AndyCam, this sounds really frustrating, I've passed your comments back to our product team so they are aware of this perspective.
I understand that you don't want to leave the Terminal turned on all day, therefore it misses the 3am reboot explained in my previous comment. What you could do going forward is change the time of the software update to another time and turn it on before you begin your shift.
I know this is not ideal if you don't use the Terminal frequently but the updates happen every 2-4 weeks and are important to ensure it functions correctly.

This is so frustrating and risky to business.
Terminal stuck in update at an event so couldn't take card payments.
Is there not a better way like iOS for example where you are notified of an update and can choose when to install?
This would be so much easier and less risky
