I know the maximum daily instant transfer is £3500 but I have more than that in my account and it seems rather than allowing £3500 today and lets say another £3500 tomorrow it is simply greyed out... this seems wrong, as there should be an option to do the max allowed surely?
If there is a way please can someone let me know?

I’m sorry to hear you’re unable to send funds instantly right now. From what you’ve said, it sounds like your current balance contains individual payments that are larger than the £3,500 maximum limit. While you are able to transfer up to £3500 per day, it’s not possible to effectively split an individual payment that was larger than £3500, into smaller transfers. You’ll find more on instant transfer limits, here.
If the £3500 you've been trying to transfer is made up of smaller payments that you captured, then there are a few other things that could potentially be a factor. However without direct access to your account, we wouldn’t be able to look into this further for you via the community platform. If you don’t believe that it’s the splitting of a larger payment that’s causing the issue, then our customer success team will be happy to dig a little deeper.
