How do I update a published site by working on a draft over time?

I have a published site and I want to slowly add pages to it and an About section, etc.

Do I have to do it all at once or can I start the About section, for example, save the draft, revise it on a later date, and then when I am ready push or publish the update?  I mean if I start to make changes or additions like this can I come back to them later to finish them or do they have to be published immediately?
