Should I add photos to my gallery page or insert 1 photo at a time?

Hello,

A Super Novice here, and aging rapidly. What I'm trying to do is add categories with a photo to my page.  I have tried to add 1 photo at a time and have tried a gallery.  I had my wife cut my hair really short so I would quit pulling it out.  LOL.  I will be having about 7 categories with a caption underneath of it, or on the bottom of the photo. 

When I do get a caption to "stick"(under the photo), it looks kinda strange because I can't center it.

The only thing I have got good at is finding and clicking on the little delete X.

Any help is appriciated.

What types of categories are these going to be? Do you intend to sell items, or is this more to showcase galleries?
