Make a variation not available online only

I have two variations of a product. I want to sell both in my store but only 1 online. How do i make one invisible online? I do not want to delete it, which seems to be the bulk of answers to this type pf question. I just want to turn it off for online.

I noticed it's your first post, welcome to our community 👋 

Right now, when an item is listed as available online, all the items variations will be available for purchase online as it's not possible to mark individual variations as unavailable. 

You would have to list each variation as its own item in order to achieve this.
