This is tricky. I think the best way would be to sell it as an item for free on your site. Then have it for pickup only. Unless you require a payment, then perhaps set up the payment as a deposit, and be sure to put that in your description. You would then set the fulfillment settings for your location to NOT automatically assign pickup times.
This allows you to set up a short message in the cart and order notifications AND you can set up instructions for customers during checkout, order notifications, and order confirmation.
Set the instructions to say to call you for an appointment. If it is free then you won't have to worry about processing payments or refunds. Perhaps you can put a price range in the description so they know what to expect? Then once they call, you set the appointment manually and you can then have them pay once in your store/site.
Service Library items do not show up on the site. Customers would use the booking app or have your site set up as a place that provides service vs retail. Now I could be wrong on this part, so if anyone wants to chime in, please correct me. I played with this a little before answering your question and that is the result I got.
If this helped, reply and let me know, and drop a kudos ❤️
