How do I create a Promo Code?

How do i create a Promo Code so that:

...I can add it in check out?

...a customer can add it to an online purchase?

...so that a person can apply it to an appointment booking?

For your Square Online store, you'll want to create coupons for customers to use when they check out. For your Square Appointments, you'll want to create discounts within your Square account so those can be used when booking an appointment.
