How do I turn on email collection on my Square Register?

I have been trying to figure out how we enable email collection on the customer facing screen on the Square register.  I know I have seen this on other merchants but we have Square Restaurants.  I have no way to build a list or email people for a review if we can't collect emails this is silly...

 

We print receipts automatically for each customer as well as part of the order/ticket process for tracking since everything is esssentially a pickup order.

The options are a little different in Canada vs. the U.S., as you are required to receive your customer’s express consent before sending them marketing emails in Canada.

That's not what I asked.  I wanted to know how in the Square REGISTER for restaurants workflow a customer while paying can enter their email into the customer display device for email marketing or other communications?
