If a client disputes a ticket with their bank for a portion of the full amount and I accept it and return that portion, can they at a later date dispute more money back from that same ticket?

Hi @PHS850.. This is possible (and permissible by the rules that all card companies have). For example, if customer purchases multiple items and quickly finds one to be defective or unsatisfactory (or maybe not delivered). If they dispute only that item because they (for example) were getting nowhere with the merchant, they can dispute that item. If they later have an issue with another item and can't get the merchant to respond again, they can then dispute that one. That's only one possible scenario, however.
