If I understand correctly, this is exactly what the KDS does. The KDS takes the place of printed production dockets and replaces it with an electronic screen.
We use it in our restaurant. Printed Dockets still go to the kitchen but all things done by the front of house staff (drinks/coffee/cakes) all go to the KDS. You can clear individual items or whole dockets from the KDS with a single tap.
You tell the KDS which categories to show (and therefore you generally remove them from the printer categories.

If you are going to invest in the hardware for it then be sure to go down the Android route as the iPad version is being sunset (which is perhaps why you couldn't find it).
