Do Ihave to have the Scribd logo at the bottom of a document I've uploaded unless I upload it a different way?

Yes, the Scribd logo will always show up unless you add your document to your site in a different way. Sorry for the inconvenience.

What other ways are there to upload documents,etc., that will enable you to avoid having the Scribd denotiation attached to them?

There's an option in our App Center which could work as an alternative:

August 2017 and still the scribd issue remains.  If so many people are having problems with Scribd and weebly, and you're recommending an alternative third party product, why doesn't weebly dump scribd in favour of the alternative.  Better still, though - why doesn't weebly work with scribd to resolve the issue??

I am also having this same problem, uploaded a pdf and is not accessible by viewers. Unable to make document public.
