Better Organization of Inventory/Retail Options

I run a retail greenhouse and need a better way to use the system at check out.  When we started we organized like this (example)

Category - Perennial 1 Gallon (or B&B Trees or whatever)

Variety - Bee Balm

Super simple, super easy. 

However, as our business has grown we have added more varieties and I am trying to keep track of the items/colors/varieties we sell.  It is getting way too crazy to try and check someone out because now we have again as an example

Category - Perennial 1 Gallon

Variety:

Bee Balm - Bee you Bee Free

Bee Balm - Cambridge Scarlet

Bee Balm - Coral Reef

Bee Balm - Grand Parade

Bee Balm Midnight Oil

Bee Balm Pardon My Rose

Bee Balm  - Pocahontas

Bee Balm - Sugar Buzz Blue Moon

Etc

Etc

Etc -

There are 12 different types of Bee Balm and it is only one of the MANY different plants we sell so checking someone out, scrolling down the list is getting ridiculous, time consuming and frustrating.

Someone I am certain has a WAY better way of organizing than this.  Can you help a girl out?

I currently have 14 overarching categories but hundreds of variations in each category. 

Would appreciate any ideas you are willing to share.
