Your sales summary on your online Square Dashboard will show both your service charges and tips as two separate line items. Service charges are considered separately since they are often taxed.
If either your service charges or tips seem lower than expected, see if adding both rows provides you with a figure closer to what you were expecting. Services charges will reflect on the row directly below your gross sales, while tips will be towards the bottom of your sales summary.

So in the UK, when I am working out and filling out peoples pay templates I go to Shifts > Labour & Tips. Copy the tips and the hours across to Xero.
Would I then manually have to work out the service charge? By taking the figure from the sales summary and dividing that to each staff member on hours they have worked from schedules and adding that figure to Xero?
In the UK, all tips and service charges are both taxed.

Service Charges do not reflect under Labour & Tips.
This will likely be a manual process. If you are doing tip pooling and spreading the total among the Team, it shouldn't be too difficult, you can just take the data out of Reporting > Reports > Service Charges > Filter by period
If you are accruing Tips & Service Charges per team member collected by, you can also filter this report by the team member who collected the Service Charge under "Display by: Team Member (collected by)"

This does help, but I do think that this should also be a feature request, so it is reflected the same as tips on the labour & tips page.
For a few reasons: Firstly, I only just found this out by a staff member asking me questions about it. To me, it wasn't very clear when I set it up and I first thought it would be included in tips automatically, I would assume that probably quite a few restaurants won't know that they have to actually work the service charge out, so the business owners are probably accidentally keeping the service charge, which is against the law in the UK. It would be very helpful is Square could at least have a message underneath the setting to let business owners know what they have to do.
Also, it would be really useful information and make paying the staff much easier.
Not only that, but to have a live figure on the Square Teams App, like the tips currently, would also help to encourage the staff to perform better.

I would love this feature, and 2 weeks in to using Square it is really missing.
I really loved the idea that the team would feel motivated being able to see their 'live' tips within the Teams app, but we collect no tips and it's all service.
As you have mentioned they are taxed, and treated the same in our business case so would be far easier for there to be a simple tick box option within the service charge settings 'Treat service charges as tips' would combat the issue and they could simply be referred to as tips in all reporting etc or 'Tips and Service Charge' together.
The idea of Square, Square Teams etc is to remove the need for manual calculations to have to happen so this would be super useful. Happy to raise it as a feature request if it hasn't been done so already.
