Hello - thanks in advance for any guidance on this. I am trying to setup a "thank for your enquiry, we will get back to you soon" type message that is automatically emailed to a customer after they fill in our contact form. Can't find how to do this. Sorry if it's really obvious, I have just hit a dead end with it.

I think what you mean is it will inform the customer you have received their message etc..
There is a section on the contact form setting which will show a confirmation message once they have submitted their contact request.
On the left menu where it says settings - confirmation message
Once your customer presses to send the message the message in your confirmation box will automatically show on the screen instead of the contact form.
I don't know if this will help 🙂
