Hi,
I'm just setting up my appointments system. I run a photography business where I always work on location (which the customer chooses when they book). I set up a custom field on my appointment system asking for photo shoot location, which I thought was working well, however I now realise that if a repeat client books another appointment, they are not asked for that information next time, as the system holds the answer they gave the first time and thinks this is still valid.
How can I collect the information each time?
Is there any way to change the phrase "Appointment Note" which appears each time to text of my choosing? If so, I feel that could work?

It sounds like you added the custom field requesting the shooting location under the Customer profile fields (in Appointments > Online Booking > Settings). If that's the case, it's expected behavior that the information is not requested when your customer checks out again, as it is attached to their customer profile.
Editing the title of "Appointment Note" is currently a feature request, as well as creating text modifiers for services. You can file these requests on our Ideate page for added visibility.
A workaround would be to set your Appointments preferences in the Calendar and Booking settings, to accept appointments at the customer's location.
This way your customer will be requested to add an address for the appointment at checkout :
Since the services you offer are more personalised, it might also be worth taking a look at online forms such as Jotform. This integrated application lets you create online forms to collect payments. Once you receive a payment through the form, you could then create an appointment manually with the customer's information, mark the appointments as paid and send notifications to your customer.
