Is it possible to have a site without one of the 'canned' themes?  Can I just use the 'text' and 'graphics'  plug-ins in the left column?

By "no theme" do you mean a totally style-free site? It could be possible to make a custom theme that would be super minimal with almost no styling. I'd be simpler to just go with one of the more clean looking themes, delete any default content added, then use the "no header" page type for all site pages.
