Id looking to use the birdseye theme. I want to get rid of the button and text in the middle of the header, and add a youtube video or a picture with a hyperlink to a video.
Can someone help with this?

Hey @itsme! It might be simplest to just a different page type for rather than "Landing Page"; check out the "Short" and "Tall" header types for that theme. If you leave the text default for the headlines they shouldn't show on your live site.
As for making the background image link to something or be a video, you'd need to customize your theme to do that right now. We don't provide assistance with theme customizations, though some of our helpful Community users might be able to help.
A third option is to use the "No Header" page type and put a video or large image at the top of the page. If you use a large image you can link that like you want.

You'd have to customize your theme in order to remove that section of the page. We don't provide assistance with custom changes, though if you're familiar with it yourself you can do that by going to the Themes tab, then clicking on Edit HTML / CSS.

Thanks @Adam. Dont really like the no header option, I checked it out a large image stops at the margins, it wont bleed out to the edge like a header. Plus I cant put a video in the middle of the image, they have to be seperate.
The tall and short options still dont solve the problem.

You can achieve this by modifying little in the html.
Not sure if this is something you are looking for:
