Schema.org markup

Well, once again I find I must be more of a webmaster than tending to my actual business.

What the heck?!

Would there happen to be a better way to address this Schema issue?

You can use Google Data Highlighter which is kinda like schema light (although not as good).

Start by using a generator, if you need to edit from there at least you have a base to edit

Example: If you google "Local Business Schema Generator"

Results include

https://supple.com.au/tools/local-business-schema-generator/

and

http://microdatagenerator.org/localbusiness-microdata-generator/

Enter your basic info and you get your Schema shot out right there. Then double check it with Google's Structured Data Testing Tool.

Having similar feelings to you my friend. I put it on the back burner and am getting back to sales for now, structured data will be the death of me.

I absolutely agree...Schema and JSON-LD is an urgently needed addition to Weebly eCommerce. Shopify makes it very easy with apps like this: https://apps.shopify.com/seo-json-ld-boost-by-verge

Why can't we get this? Does Weebly want us to move to Shopify?? Why not a JSON-LD autofill on each product page that could then be quickly modified. Doing it manually is very time consuming. And not consuming time is why one uses a platform for an on-line store, no??
