How do I block out a date + specify a date for pre-order????

HELP! I am trying to launch online ordering website for my restaurant and I need the first order to be next Sat 5.30 and 5.31. Cannot seem to find how to do this! It keeps securing 5.23, which is too soon for all of my prep.
