Can a client reserve more than one spot in an event and be told if it is sold out?
I Think recurring Appointments should work for our sailboat tours. There are only six seats, and the ride is shared by individuals, couples and families. Also... Every morning there is a day sail and snorkel adventure, and every evening a sunset sail. I'm hoping that I can create a web page with a menu of events, and simply link Square Event to my "Book It!" button on my list.

Oh well, no such luck. But I did bring up a good point with this and it might help others in the future.
Here's the reply letter I got from tech support:

Thanks for reaching out to us about Appointments, My name is Jordan I'm a specialist with this product and I will be helping you out Today.
At this time, Square Appointments doesn’t support booking classes or group sessions, where a limited number of clients can sign up for the same session. I think this is a great suggestion though! We’re constantly working to improve our products based on feedback like this — I’ll be sure to pass your request off to our Product team.
As an alternative, I’d suggest scheduling overlapping sessions for each client on your account. Please keep in mind that it’s only possible for you to create overlapping appointments manually, on your calendar. Your customers won’t be able to book overlapping appointments.

I'm not sure if Square Appointments is the best option in this case. There are some limitations that would make Online Booking difficult. At this time we don't offer group or class booking. Also once a time slot is filled on your calendar it won't be available on your Online Booking Site. You can manually double book appointments on your calendar, but this would require customers to call or email you for booking.
Creating events on the Square Online Store might be a better fit since a customer can purchase multiple tickets for an event. Once an event is sold out customers will no longer be able to purchase tickets. The only thing that might give you trouble is creating the events. Each event needs specific dates and times, so you would have to constantly create new events for each day of the week.
