Changing text colour not easy

Although I've got the palette and check a suitable colour, I never get the text to be that colour. I select the text and then check the colour, or sometimes use the colour 'spread'. No luck! It just stays more or less as is. What am I doing wrong?

Thanks for the extra info - that seems like wise move on Microsoft's part to adopt that engine.
