A lot of people will make a copy of the current site, then edit the copy, and when finished move over any paid services to the new site. Blog posts don't copy, though, so that wouldn't be an option if you want to keep your blog posts. You can also just make your changes in the editor and wait to publish again until you're all finished with your site changes. The published website will continue to look the same until you publish again.
