Why don’t gift cards show apart of gross sales

That's a complicated question and hard to answer as it depends on the sate or even the county you live in.  Gift card sales are considered liabilities and kept separate from your income as you have basically taken money and said you would hold it until they decided to use it at a future date.

Square keeps it separate for easier tracking purposes.  

 

But it is best to consulate an accountant for the best practices for your business.
