Can a record a cash transaction and then generate a receipt for a customer?

Hi @mpayton777 and welcome to the Seller Community! 👋 We're happy to have you. As for your question, you most definitely can. As opposed to swiping a credit card, you just press "Charge," and then select "Cash." Here's a screenshot:

is there an option in the terminal to keep a copy or record of the receipt with the customer's information on it so in case there are any disputes?

All your receipts are automatically recorded, and you can see them by heading to transactions in your dashboard, selecting a transaction, and clicking "receipt". Check out this article for some more tips on preventing disputes.
