Assuming you have the Square Register app on your phone, when you open the app, it either opens in inventory view or a manual view which looks like a calculator. To choose one view or the other, touch the two icons in the grey bottom part of the screen.
Once you've chosen the manual view, input the dollar figure and hit charge. Choose your charging option. From there you can choose to swipe a card or enter the card number manually.
