I am trying to change how we ring customers out. Right now they walk up to us, swipe card, tips, signs, done. But is there a way to not have them walk up to register, but I take the card swipe it and it print a receipt for them to complete tip and signature. And then I take it back to the register and complete the rest of the transaction? Does that make sense? Thanks!

You can definitely switch Square to a printed signature receipt.
On your tablet, Settings -> Checkout -> Signature and Receipt
For Signature, enable Collect Signatures then Sign on printed receipt.
A few notes about printed receipts:
- This setting is device-dependent. You can have a tablet that a customer signs on the screen and one that prints a receipt.
- You have 36 hours to settle the tips on each receipt. You can do this from the Transactions section of the app. (More information)
- Any receipt not settled after 36 hours automatically closes with a $0 tip. There isn't a way to reopen the ticket
