Hello @kathleenrapp! Great question!
Even though you don't see your customer's email address, when you charge their card on file they will be sent a receipt automatically. You don't need to enter their email address again. This is because email address is required in order to save a customer's card information from the Point of Sale app or from your Square Dashboard.

Thanks for explaining that the receipt is sent automatically - there's no way to know that this happens because the screen asks for the email address again after submitting the charge when using "card on file".

@kathleenrapp If you're using a card that is already saved you shouldn't have to re-enter your customer's email address. Is that what you're seeing?
But if you're saving a new customer's card information you will be prompted to enter your customer's email address in order to save their card.
