How do you update the date of pick up day have my locations set for Saturdays only and the date of pick up is the following Saturday. For example, I received two orders today for pick up this Saturday. At checkout, it gives a pick-up date of Saturday, May 9, not Saturday, May 2nd.

If you have your business hours set for Saturdays only, you should be able to set the pickup order prep time to 1 business day, which will push your orders to the next business day to be picked up.
You can edit these settings under Online Store > Settings > Pickup & Delivery. Let me know if this helps or if you have any other questions. Thank you!

All of my locations are set like that and it is still not working So strange and don't know what else to try

I flagged this over to one of our Ecom Specialists at Weebly, and he suggested that I have you reach out to our Support Team directly. Hi there, I don't see where I need to escalate this. It is causing big issues because now I have people who placed orders wanting to pick up today, which we are not doing. Any guidance to find where I need to go to ask for assistance.
