I am looking at starting to use the scheduling option on Square so I can enter appointments and send reminders. I do NOT want clients being able to make their own appointments or get any other communications beyond reminders. Is it possible to set it up this way?

Yes absolutely.
From your Dashboard -->Appointments --> Channels. There should be a toggle for enable online booking. Having that grayed out will not allow clients to make their own appointments, but they will still receive reminders for their appointments (which you can also change the settings for in Dashboard --> Appointments --> Settings --> Communications.
