Is there a way on the Square Terminal checkout screen to hide or delete the 'Library' tab? We don't use the Library, and sometimes it confuses some of our newer and older employees when it instead of the keypad shows up on the checkout screen

At this time, this is a feature request as there is not a way to hide the Library tab, however, you can customize the next tab on the screen called favorites. Take a look at this article with more helpful tips.
