Specific dates for pop up shops

Hello,

I sell my items at pop up shops around the holidays. I usually have 1 date with a limited time frame when customers can pick up their orders. They are required to pre order, and can do so up to 3 weeks in advance. How can I set a specific date/dates on my site for pick up without changing prep time every day? There doesnt seem to be an easy way to do this. Id also like to select a specific date for delivery for the same event, but have it a different date from the pick up date.
