Can I process a refund to an internal gift certificate?

I have a customer who returned a couple items, but she wanted store credit. I have calculated the store credit and my girls are going to ring her up as a gift certificate. I need to process the refund, however, as a gift certificate, not her AMEX. I do not have Square gift cards or ecards as we only sell a few gift certificates per year. We also only do a couple refunds a year, as well, so I am not too familar with this part of the system. We are a small museum gift shop so we just don't have that kind of need.
