is there a way to set up 3 for $20 as a bundle w/ a list of items they can choose from. Also set it up where such items will come out of inventory as well?

Yes, if you go to your Square Dashboard - Items - Discounts you can create Quantity based Discounts.

When I did my by 3 for $xx.xx, I had to do the math to see what the actual $ off each Item was I believe, and have that as a cash discount. I would test it for your self. I just looked at my by 3 for $33 and it shows a Cash off of $3.99, which brought the candle from $14.99 to $11 each...... 3 x $11=$33. You can choose items that are included or categories etc. Since for me you did not need the same scent for my discount to apply, I chose the category of 16oz candles to apply this discount rule to automatically.
