How do I imitate a refund when. The customer did not pay through square.

If the original sale wasn't made through Square, you won't be able to process the refund directly through Square either. The best I can think of for you to do is to use the Pay Out function and keep a paper trail of what was refunded to whom so you can do the inventory part of the refund manually in whatever software you use.
