If some one orders can I assign a Courier to this job through the app. Such as on demand delivery?

Not by default, no.

Very recently Square announced a partnership with PostMates for a third party delivery service. You can link accounts in the Apps section of your Dashboard--if it's available in your area that is...

Otherwise you have a few options. I talked about some ideas in this thread, and a company called OrderEm has a link there to their site/app.
