Hello @pattiflister ! You can do up to seven user-defined screens on the Point of Sale app.

When you're on the third screen in edit mode, if you add one item to the grid, a fourth tab will appear. Every time you add an item on the fourth, fifth, or sixth tab a new tab will appear.

Once you're done editing only tabs with items on its grid will appear. You can also edit the tab title by long pressing on the number.
