I want people to know the city and state of the pick up of course so they can choose whether they want pick up or delivery but I don't want the full address to be given until they get to check out.

It's currently not possible to offer pickup as a fulfillment option without including your address information throughout the checkout process, @AryasSweetRetre. I believe the main reason we show the pickup address prior to checkout so that customers can decide whether the pickup location is within their range before making a purchase. I'd like to dig in a bit - is there a reason you do not want customers to see the pickup location until they have made their purchase?
