We have one practitioner that utilizes two treatment rooms. Am I able to set up two treatment rooms and have the square app stagger the bookings?

I think what would be easiest is to set up two variations with the service items you are using. That should help make sure that your practitioner isn't being double-booked in both rooms as the same time.
