We accomplish this by using gift cards for deposits. We keep the gift card with the event paperwork. Then when the event happens, we ring up the total for the event and swipe the gift card for the deposit portion payment and then collect the remaining balance from the customer. We have been doing this for several years and it works perfectly. The gift card deposit doesn't tally into the day's revenue totals since it is a gift card. You could even do it with egift cards if you don't want to invest in the plastic ones.

Is there an option to take deposits in Square POS for future events? So essentially you would enter in an amount swipe the card but NOT have that sales total included in the sales that day since it’s simply a deposit for future goods?
