Category/item-specific sales tax and pricing question

So I'm a cafe that's adding booksales but at such a small scale that I don't want to overhaul everything and fussily track inventory, etc. I'm hoping to add a category (BOOKS) with a write-in price value (because I anticipate a variety of prices that constantly change) that calculates and adds a sales tax value that I otherwise do not charge on any other item.

I'm anticipating not having too much trouble with that sales tax bit, as I understand I can select which categories or which items have it applied, but how do I create an item with a write-in price value?

Congrats on expanding your business! As a bookworm, myself, adding books to any business it great to see.

What you're asking for this item, is possible in your Item Library. You will set up the item and save without a price. This will allow you to enter the price at checkout when you add the item to the sale.
