HELP!!! FOOD TRUCK LOCATIONS & TAXES

I can't figure out how to set up taxes for city/state/local for my Food Truck that has venues in multiple locations.

Hey there! You just need to go into items and create the appropriate tax (sales tax, etc), and select which locations you want those taxes to appear. When you create your item (or just edit an existing item) those taxes will be selectable if you enable them. You can have multiple taxes on items.
