Is there a way that when I attach a square contract to an invoice the customer must sign the contract when they go to pay the invoice?

Yes - on the bottom just below the reminders section you can add contract. I'm not sure if it is a "must sign" as in they can't pay the invoice because I don't use that functionality.

No I get how to add it. I want them to have to sign it to pay the invoice.

Right now, there isn't an option to enforce the contract being signed in order to be paid @ConfettiCorners . However, the contract will be linked to the invoice as your customer goes through the payment process. It might be worth sharing this as a feature request on our Ideate board with a bit more information on how you'd like to use this in your everyday business operations. This allows us to track demand for features, and pass feedback onto our teams.
