We only sell three products and the speed of processing each customer is critical. Using favourite helps, but it still take 4 clicks to get to the point where the customer makes payment. Is there anyway we can shorten the process?

Do you use Custom Amounts as well as Favourites? If you’re completing a sale for a single, custom amount, you can skip the Review Sale step by going to More > Settings > Checkout > Payment types > toggle on Skip review sale.

The Square Point of Sale app also gives you the option to skip the receipt screen to help speed up checkout - do you have this setting enabled?

Tap More > Settings > Checkout > Signature and Receipt.
Toggle Skip Receipt Screen on.

Hopefully these settings will help speed things up for you, but otherwise most steps during the checkout flow are required at this time.
